I made these great breakfast muffins for my family. They are nutrious and inexpensive.
peanutbutter and Jelly muffins
1 3/4 cup of flour
2/3 cup of brown sugar
2 1/2 tsp of baking powder
3/4 cup milk
2/3 cup of peanut butter
1/4 cup of vegtable oil
1 egg
1 1/2 tsp of vanallia
Jam or Jelly of your choice
Combine flour brown sugar baking powder and 1/2 tsp salt in a mixing bowl. Wisk together. In a separate bowl beat together milk, peanutbutter, egg, vanilla and oil. Stir flour mixture into peanutbutter mixture with a wooden spoon. Untill moist. The mixture will be slightly lumpy. Drop mixture into muffin cups filling half way. Then add a tsp jam of your choice covering jam with more peanutbutter mixture. Try to completly cover. Bake 350 20-25 minutes yield 14 muffins
